Okay this has nothing to do with Southern Cooking, this is my 6 year old granddaughter’s favorite but that’s because I let her make it herself (with supervision of course). She loves to cook, bake more but I’m not a baker I don’t have the patience and my hat goes off to those who can do it. I’m good for one batch of cookies and the rest will make its way to the freezer.
Ingredients you will need:
1lb ground beef
1lb Italian turkey sausage (mild) - or pork
1lb ground turkey
1 small onion (cut & diced)
1 bell pepper (we use red because she can see them) (cut and diced)
1 box of dry pasta (this will depend on what we have but it has to be a fun pasta – whatever that means)
2 kid handfuls of Colby Jack Cheese (optional)
1 bag fresh Spinach (washed and cut) (Sssshhhh this is her secret ingredient)
1-2tbsps of oil
1tbsp Italian seasoning
1tsp salt (kosher)
1tsp black pepper
Turn the Pressure Cooker to browning (according to manufacturer instructions), toss in oil, onions and peppers. Sauté the mixture for about 2-3 minutes, toss in the Italian sausage, ground beef and ground turkey brown ***Note if you are using pork sausage, I recommend you cook this thoroughly before tossing in ground beef and ground turkey. You do not have to let the other meats cook entirely because it will cook with the pasta.
So now she has mixed everything, pour in the dry (fun) Pasta and mix with the meat to ensure you coat all the pasta, pour in your sauce, add water to your sauce jar and slowly pour the water into the Pressure Cooker. You want to just enough water cover the pasta and stir again. Don't throw out that pasta jar, you will need it to pack the leftovers and let someone else enjoy it without worrying about that Tupperware container you will never see again.
Wait for it – Wowza (her words) she does believe she is a Chef, toss in the cheese and stir. This step is optional for you, for us this is her recipe.
Close the lid to the Pressure Cooker and set the timer to 8 minutes (according to manufacturer instructions). Time’s up!!!
Give your pasta a stir and a taste, if it is too firm for you, just close the lid for a few more minutes, there is no need to turn the Pressure Cooker on again.
Wonderful!! She eats with shredded Colby Jack cheese and garlic toast. I pack the rest in a container and she takes it home bragging to her mom she cooked Saturday’s lunch.
